PDO (Protected Designation of Origin) and PGI (Protected Geographical Indication) are EU quality marks that guarantee a product comes from a specific region and meets defined standards. Corleone Gold is currently progressing through PDO and PGI certification, which will formally recognise the unique character of the land and the oil produced from it. Slowly but surely progressing since 2024 – navigating Italian red tape is an interesting experience! – we are hopeful to have accreditation finalised later this year.
Yes. Corleone Gold is 100% certified organic. The groves have been farmed without pesticides or artificial inputs for generations, long before organic certification existed as a concept. Every aspect of production, from harvesting to pressing in meticulously controlled temperature conditions, to bottling and beyond – now even its UK journey are accredited to the highest possible organic standards.
Store Corleone Gold in a cool, dark place away from direct sunlight and sources of heat. The dark glass bottle helps protect the oil from light exposure, while the high polyphenol content acts as natures own preservative, meaning Corleone Gold’s naturally occurring antioxidants help maintain freshness and quality much longer over time than many other olive oils.
Corleone Gold is still best enjoyed while fresh. Once opened, we recommend using it within four to six months for the best flavour, aroma and nutritional profile.

Yes absolutely!
Corleone Gold can be successfully used in a wide number of delicious recipes. However we do not recommend deep frying, or even shallow frying in Corleone Gold. Not because it won’t work well – we’ve tried it, and it produces excellent results – but because high heat takes away from Corleone Gold’s key characteristics.
As Diane says, don’t use your best oil for this step: it would be a waste! Reserve Corleone Gold for only the most special dishes where its true character can shine through. Use a standard oil for frying, and simply finish with Corleone Gold afterwards.
Note: one of Diane’s most popular recipes (and one of Pietro’s favourites to cook at home) uses exactly this principle. See: Pasta alla Norma – Aubergine, Tomato & Ricotta Salata
